n_maher Posted November 11, 2013 Report Posted November 11, 2013 Currently marinating chicken in a mixture of lime juice, salt, pepper, oregano, and olive oil and just finished roasting tomatillos for a fresh batch of salsa verde all in preparation for enchiladas tonight. The chicken will get grilled, shredded and then mixed with cheese for the filling and a portion of the salsa will get mixed with an egg and sour cream to form the topping. Easily one of my favorite meals to make and eat at home.

If possible, when pulling off the grains, don't touch the fruit innards or you hands will get a black stain for some time. 1
