I tried sous vide on them a few times and finishing up over a very high flame or in an iron skillet, but IMHO the cut is so delicious it's not worth the climb vs simply cooking them... HS 2
HemiSam Posted March 18, 2024 Report Posted March 18, 2024 We visited a local restaurant, Eau Tour, that I have been wanting to go to for a while. Unfortunately I didn't take a pic of the better halves' red snapper...it was the best cooked fish I have had in a long while. The duck confit looks rather drab but the sauce was amazing and the side was a grilled lettuce or cabbage layered like lasagna with delumpcious cheesy stuffs... Thumbs up to this joint if you find yourself in Houston. HS 6
