The wheel pasta was for the kids though they ended up falling asleep before dinner. Was planning cooking it for Easter but I wanted to ride tomorrow afternoon so I cooked it today instead.

Second time cooking this and it has turned out great both times. Super easy. The au jus turned out better this time though.

Awesome fried chicken at my favorite, and the only good restaurant in south hill, VA. Chef stopped me as I was leaving with a few extra pieces to go.

Cooked a 2.5" filet using a meat thermometer. Was in the oven at 200F for 40 minutes I think. I pulled it out when the internal temp was 120F then seared. The crust is not as crispy as it has been in the past but the center is completely evenly cooked. Wolfed down with fingerling potatoes and mushrooms.
