Being a working class family with four kids, my Mom was always trying to stretch a dollar when it came to meals. One of the cheaper meals to fix was a Southern staple...pinto beans and cornbread. It was a favorite of my siblings and I. It's a meal I make a few times a year, but yesterday I decided to change it up a bit. I decided to fry up a half dozen strips of a good quality peppered bacon, then saute a diced Red bell pepper in the bacon grease. The bacon was crumbled and added to the cornbread mix, along with the bell pepper.

 

It was a great addition, especially with the pinto beans smothering the cornbread. Yummy!

but I don't think I will use Chilean Sea Bass in this going forward.  I think Mahi Mahi may be my favorite so far in this application.

 

 

 

 

Colin, now that you're near Halibut country, I'd recommend you try it in the curry. It will hold up well, and is delicious.

I just had a sublime crab and corn bisque, followed by a perfectly executed crawfish and shrimp pasta with cream sauce.  Finally, once I was already stuffed, I had a way too large, amazing bread pudding with rum sauce.  I feel ill I ate so much, but the flavors were all the best I've had since arriving in Louisiana.
