On a lighter note, we did a PCH tour starting outside SF at Half Moon Bay and ending in Santa Barbara before flying out of LAX. Lovely trip and we got lucky with the weather...or is that oxymoronic with CA?!? This was my favorite dish...little neck clams and chorizo...a play on mussels in wine sauce...lovely dish! The chefs at Pebble Beach can burn! HS 6

HemiSam Posted December 9 Report Posted December 9 Well, that's on me, @TMoney... I grabbed a dodge durango for room for the suitcases and my familiarity with the user layouts. Would have LOVED to have had my dated porsche with me (6M)...I just went through the suspension and it's really singing. The turbos flash at 3k rpm...old school. Kinda entertaining... AWD makes it tough to screw up too much. HS 1

mikeymad Posted December 15 Report Posted December 15 Ribeye - reverse seer on pellet grill.. Set Chimp to 225 until internal temperature got to 115. Then took grill up to 500 and seared for 2 minutes each side. The temp is pretty spot on. And lovely smoke. 6

mikeymad Posted December 16 Report Posted December 16 Steak day two.. Yesterday's was a little heavy on the smoke for me. So I set the Chimp again to 225 until internal probe temp of 115f, but at a lower smoke setting. Then used cast iron pan on induction stove top to sear for 2 min {30 sec per side}. Steak flavors much more in balance with just a touch of smoke. Very close to what I wanted. Science! 8 1
