I tried sous vide on them a few times and finishing up over a very high flame or in an iron skillet, but IMHO the cut is so delicious it's not worth the climb vs simply cooking them... HemiSam Posted March 18 Report Share Posted March 18 We visited a local restaurant, Eau Tour, that I have been wanting to go to for a while. Unfortunately I didn't take a pic of the better halves' red snapper...it was the best cooked fish I have had in a long while. The duck confit looks rather drab but the sauce was amazing and the side was a grilled lettuce or cabbage layered like lasagna with delumpcious cheesy stuffs...
