I tried sous vide on them a few times and finishing up over a very high flame or in an iron skillet, but IMHO the cut is so delicious it's not worth the climb vs simply cooking them... HS 2 Quote

Unfortunately I didn't take a pic of the better halves' red snapper...it was the best cooked fish I have had in a long while. The duck confit looks rather drab but the sauce was amazing and the side was a grilled lettuce or cabbage layered like lasagna with delumpcious cheesy stuffs...
