VPI Posted September 5, 2011 Report Posted September 5, 2011 Oversized homemade biscuits and 48 Hour Brisket with homemade BBQ sauce Quote
shellylh Posted September 6, 2011 Report Posted September 6, 2011 Were the biscuits also made in the Sous Vide? Tonight was our "Sunday dinner:" Ribeye, baked potato, salad. I decided to cook the steak indoors instead of on the BBQ given the number of fires already started in Texas. Used the Alton Brown method (sear in preheated cast iron pan on stove for 30 sec/side and then stick in the 500F degree oven for 2 minutes per side). It was great but I still like the BBQ better (gotta love the flare ups). Quote
Absorbine_Sr Posted September 10, 2011 Report Posted September 10, 2011 We had a hankering for soup tonight, so we winged it with what we had in the house. Made a chicken-chorizo-cabbage soup that turned out very flipping good. Very hearty with small shell pasta and lots of onion, celery and carrot. Good flavor from the chorizo but not really spicy. Just damned good. Quote
VPI Posted September 10, 2011 Report Posted September 10, 2011 12 Hour Pork Loin, fresh beans and sun dried tomato and mozzarella crostini. Quote
Absorbine_Sr Posted September 10, 2011 Report Posted September 10, 2011 12 Hour Pork Loin, fresh beans and sun dried tomato and mozzarella crostini. Looks excellent Jeff. Quote
shellylh Posted September 10, 2011 Report Posted September 10, 2011 Looks good Jeff. Mike: I cannot imagine having soup - it was 98 degrees today. Just had an avocado stuffed with cheese and fajita steak, battered and fried, and topped with ranchero sauce. It was delicious. Quote

Sorry Shelly, I'm honestly trying to herd some of this cool air and moisture down to you. Quote
shellylh Posted September 11, 2011 Report Posted September 11, 2011 I know you are trying. Texas is quite stubborn it seems. Quote
VPI Posted September 11, 2011 Report Posted September 11, 2011 (edited) Yeah, I would love to send some moisture down that way. I am sick of the rain. I had a soup for lunch today as well but we have not been near 90 in weeks. Edited September 11, 2011 by VPI Quote
jvlgato Posted September 11, 2011 Report Posted September 11, 2011 Sorry Shelly, I'm honestly trying to herd some of this cool air and moisture down to you. Have you given up on rain dancing? Quote

shellylh Posted September 18, 2011 Report Posted September 18, 2011 That looks good except that it looks like it is made with flour tortillas instead of white corn tortillas. Quote
VPI Posted September 18, 2011 Report Posted September 18, 2011 Yeah, all I had after I made the Guacamole and figured out I had no chips. Not bad. Quote
shellylh Posted September 18, 2011 Report Posted September 18, 2011 Copying Jeff (except I made my chips from corn tortillas). Yum! Quote
shellylh Posted September 19, 2011 Report Posted September 19, 2011 Since we have had a couple of damp days, I felt it was safe to break out the BBQ and grill a ribeye steak... so good... and the backyard is not on fire either. Quote
Voltron Posted September 19, 2011 Report Posted September 19, 2011 Shelly and Mikey have some nice looking snacks going on! I smoked some halibut and salmon tonight. The halibut had a sneaky hot rub and the salmon had a sweet/hot Cayman-style rub! Did you hear that Wayne? Both were very tasty along with some grilled veggies and sourdough bread, heated on the grill. Quote
