The Malbec was pretty nice, not enough to go out and buy a case but still good for the price ($13). Jacob's knife addiction is contagious. I wanted to get a wa-gyoto style knife so with Jacob's help, I ordered a JCK Inazuma 240mm Wa-Gyoto. Seems like good knife for the price. Although, I hope it doesn't look quite as gaudy in person.

I'm thinking of going with a 7" Wusthof cleaver for cutting ribs. Mens Journal recommended the 9" but I think that is more cleaver than I need. I need something that can handle blade on bone contact.
tyrion Posted January 23, 2011 Report Posted January 23, 2011 well, it would come down to profile, mostly, as they are both good steel. if you like to rock the blade a lot, the Shun is going to be better. if you like to slice more, the gyuto is going to be better. the Shuns are well constructed and have great fit and finish. make sure you don't accidentally get a Chinese cleaver, they aren't made for bone contact. The Wusthof is described as a bone crusher.
