I want to get a Thermapen.  Which one should I get?  

Also, will this work to measure of the surface of the pan?  If not, what works best for that?  Infrared thermometer?  What kind?

[I need to start cooking again or else I am going to turn into a blimp.]

I've never worried about the temperature of the surface fo the pan.  As to which thermapen, the cheaper one is good enough unless you can't wait a couple seconds

Never heard of the leidenfrost effect until now, and had to look it up.  Although it is clearly the correct name for when I could plunge my hand into a bucket of liquid nitrogen for half a second without ill effect.
