They don't chase you unless you look like a possible meal. They hang back a bit and watch you if they're just inquisitive.

Most bears don't consider humans to be food, and if they attack they usually leave you for dead. The polar bear however hasn't been informed that we're above them in the food chain, and they will eat you, burp and eat some more.

My understanding is they'll kill you and not eat you, that we don't taste good to them.

"Polar bears are the most likely species to kill humans for food, as they assume anything they encounter is potential prey. Attacks by other bear species are usually due to the bear being startled, and they will rarely eat the body."

That's from the BBC Science and Nature website, so take it for what it's worth, but I've found this to be true as well.

I know of several polar bear attacks where they eat a good deal of the human victim, but I've never heard of that with a Kodiak, Grizzly or any other bear.

Of coarse I'm sure they'd prefer a nice seal, but in a pinch a scrawny ol' human will do.
