Solid largish American cheese company. Love their Merlot Bellavitano.

Blue Stilton from and artisan (hippie) co-op in the bay area.

goes real well with the Peter Michael Chardonnay, and not bad with the 2005 Vice Versa red.

I wasn't aware of the thread, but I just had a little toasted sourdough with pepper jack. Earlier, I had some Basque Sheep's cheese, which was moar Basquer and moar better.
