  4. Going to be hard/impossible to be done without removing material. The pain will be directly proportionate to the depth of the engraving and at some point just becomes infeasible. If it's a very light engraving it may be able to be polished out but that seems unlikely.
  5. It's currently sunny and snowing with the wind gusting 20+mph. In other words a totally normal, pleasant, spring day.

  7. I do my pork shoulders sort of like Naaman does briskets. Dry rub, cook till ~150ish internal, wrap (I add apple juice to the foil), cook for a few hours that way till the internal gets pretty high but no real target, and then unwrap and cook until it hits 200. The rub I use is brown sugar, salt, pepper, cumin, garlic. I did a 4lb shoulder last weekend and it took a solid 9 hours and probably could have gone longer. It still pulled ok, and tasted great, but I let it go too long before i wrapped it. Basically I'd budget around 2hours per pound, to be conservative. More if the but is partially frozen like mine was.

  10. The cheapest Memphis is almost double the Traeger and the WAF is already going to be WAY low on this.

They have great reviews of the older stuff, the problem/challenge is that Traeger made what appear to be some really good changes in 2019 and plenty of other sites have had good/great things to say about them. The GMG options are cheaper, and I'm trying to determine if those differences are worth the cost.

  13. I've been doing quite a bit of research on this and am leaning way more towards a pellet grill/smoker - current leading candidate is the Traeger Ironwood 650. Seems to have a couple of features that are worth paying for over the Pro series.

    I never got past episode 1 of season 2, I wonder if that's even worth watching at this point. Season 1 was great.
  17. I made complicated lunch today. Chopped up leftover smoked short ribs, pan friend briefly to warm/soften, added one egg, topped with very sharp cheddar and served on a grilled bagel. It was excellent.

  21. Bone-in and boneless short ribs went on the smoker at 11:30, wrapped at 2:30, will be ready to unwrap shortly.
  22. There's definitely a part of me that would like to try a charcoal-based solution, a friend swears by his Weber Smokey Mountain, but I don't want to end up with something that I don't use.
  23. Smoke. I use the gas grill for cooking duty. And Reks, yes that works, but part of what makes the electric so appealing is setting it and no tending. No worrying if the fuel burns out or if the temp gets too high or too low. Less mess to clean up (although they all are messy).
  24. Ok HC, I need some assistance. My introduction to smoked meats, a Masterbuilt electric smoker, has been great but has taken it on the chin the last two winters and has been blown over multiple times and is probably one good shake away from death so before it kicks the bucket I'd like give some serious consideration to its replacement. I do enjoy the ease of set-and-forget that an electic smoker provides and I've been looking into to "nicer" ones that are not sold by Amazon/Big-Box stores like Cookshack and a few others but figured I'd toss it out to the serious members of this group for further advice. Is it time to step up to a pellet fed unit? If so, recommendations welcome? Big Green Egg for flexibility of smoking and stupid hot oven for pizza? Googling seems almost useless.
