No, it cooked it perfectly. It just did so much Sous Vide magic that is got way too tender and kind of a weird texture. It should have been cooked for 2-4 hours max.

134 degrees.

Today, I learned that 11 hours at 134 is way too long to Sous Vidify a NY Strip.

Colin has drawn the names for the draft order. I just need buy in from everyone that they are willing to live with this draft set up instead of having ESPN assign positions one hour before the draft. Colin will not let you know the order either so do not bother him. He has been silenced.

We can do like we planned last year and have Colin draw names for our draft order.

It actually tastes dramatically better than it looks. I probably could have made a better patty and put some work in before taking the snap shot, but I had just waited 1.5 hours for a cheeseburger.

In an hour and a half this will be a sous vide burger with a year old raw sheep cheese, scallions and a thick slice of heirloom tomato.

Deepak, you need to vote for two different times unless you want a 9 o'clock draft and a midnight draft. Looks like Tuesday and Wednesday will work for everyone that has spoken so far.

Okay, both leagues seem to have votes for just about every day possible. How about people post here what days the week of the 28th that you cannot attend a draft?

Stopped at the Farmer's Market by my house. Got some fantastic Finochietta, 12 month aged Artequeso Manchego cheese from Spain, some nice Pawlet cheese from Bardwell Farms and some Crottin cheese from France. Lots of dry aged steaks, some of my favorite Chicken Pot Pies from a local farm and assorted vegetables.

We need to decide draft nights for both leagues. I will put polls up like I did last year to narrow down dates. Send me your e-mail and I will give you your team in League 2 and that should do it. Two 10 team Leagues seems manageable.
