  8. The Wustof and Henkels blades are way too soft for me. The softness has some advantages in that they sharpen with a a few minutes on the stone, but I would rather have a higher maintenance high carbon forged blade any time for the sheer smooth and effortless slicing they provide. Most commercial chef knives sold in retail stores will have high chromium content to make them stainless and like most cases there is a trade off and the trade off is a soft blade. I use a my Shun 10 inch Damascus for big dinner parties requiring a lot of food prep which is fine in most cases but nothing beats my hand forged single edge Mitsubishi white steel Santouko style for slicing everything fast and neat. I agree with Reks though for commercially available chef knives in the affordable range nothing beats Global and Shun.

  12. I would think a coat for a greyhound is pretty much of a necessity in your neck of the woods this time of year given most greyhounds seem to have < 5% bodyfat.

  16. You guys forget, one of the side benefits of a granite remodel is that there is not waste. All of the granite that doesn't make it to be a counter top gets transformed into anti resonance speaker and amp platforms. Nate is right though, the era of refi remodels is done for a while I believe. Just as well, why not be able to afford what you buy, gee what a concept. Since every remodel around here has used the cookie cutter Home Depot look of granite and steel, when we do ours I am leaning to wards Caeserstone or some of the Corian variations.

  21. That is kind of what I recall in my conversation with Stephen as well. I think their decision to focus on one brand and model of HP is a good one especially given the intent is for the product not to be all things to all people but to be a different home theater experience with excellent audio to be a secondary goal. Similar to the concept of why home theater equipment manufacturers try to focus on home theater specific implementations with high end audio secondary. Trying to be all things to all people is a fail in the making.

  24. Well I guess "cold" is relative. I remember in highschool I moved from Honolulu (73 degrees) to Chicago in late January (negative 32 degrees). A one hundred and five degree temperature change in one week. At least up north you have months to acclimate to the big chill.
