Haha, so shiny and clean. Here's pics of the Brisket finished for dinner. Leaner this time. Still OK amount of fat in the flat area. All done Drier this time. But still very good. I guess I'm just not getting a thick visible smoke ring ever with the Keg. It's not really known for that one. Oh well, still tasty. But I'll have to say, Brisket is a lot more challenging than any other meat I've done.

Brisket is in the Keg. I left it in the fridge to make sure it was as cold as possible before putting it in the Keg. I also holding the cooking temp at around 185F for the smoking phase. Also trying the wet smoke method and put in a soup can full of water. I'll refill it when I add more pellets in the Smoke Daddy. So if I don't get a nice smoke ring this time, it's just not happening with my Keg.

First Brisket done. I ended up skipping the crutch. I did wrap in foil and towels and rested it faux cambro in a cooler for about 2.5hrs. One thing that really sucks about the Big Steel Keg is that getting a decent smoke ring is very difficult. Definitely need a really really sharp carving knife to slice, it really starts falling apart when cutting against the grain. I think for the next Brisket I try, I will use less salt and pepper. Seems like Texans like death by sodium and pepper. I used half the black pepper than the recipe called for, and it's still a bit too much.

Was about to crutch it in foil, but I popped the Keg open, and the meat was still sopping wet, still had quite a ways to go to form a nice bark, and it was already at 150. So I'm going to skip the crutch this time and see how it turns out. The Keg holds in moisture so well anyways. I always have issues with it dripping out the bottom vent, yet the fire never dies. Guess it's time to sleep and let my Auber do the work, and let my Maverick ET-732 wake me up if it somehow gets to 190 really fast.

First Brisket cook started. 14.5 lb Whole Packer Angus Select, Trimmed, Injected, and Rubbed. It just barely fit in my Keg width-wise.

Whole packer Brisket in anything better than Select grade is more difficult to get than other meats in LA. I've gotten a membership at Restaurant Depot, and wow, the meat selection is ridonkulous. They have plenty of whole packer brisket there, and at less than $3 per pound. So, next Que will be Brisket for me. Will try injecting and wrap with foil, a la Texas Crutch.

Hopefully, full HDD install is required for all games regardless, disc and download. But the big bummer is the cloud computing thing won't be standard for devs. But seems like only for 3rd party devs. When it's not a standard feature, devs often have to program for the lowest common denominator, which holds back maximum potential.

I preferred the unlimited sharing with 10 people vs. Going back to the old way of physical disc dependency. Would've made for a nice Head-case sharing circle. Wait that just sounds wrong the way I typed that one. Great, so now we have to go back to swapping physical disc's every time we switch games regardless of HDD install. Fucking retarded. All to appease the cheapskates.

XBox half dead? Not going to happen. Microsoft is the dominant player on the market. We'll see how well they hold onto that lead. Hopefully Sony learned their lessons from their failures with the PS3 and PSP. Very few people are a cheapskate hacker pirated gamers. Those that are outraged by Microsoft's new DRM scheme are a minority percentage of their customer base. But I'm hoping PS4 does much better than the PS3. Microsoft needs a good kick in the nuts to get off of their high horse. Competition is a good thing. But again, I'm more curious as to how popular tablet gaming on iPads and Android are in the future. I never really took a liking to them, but we'll see if the novelty wears off or not and how it compares to dedicated gaming consoles. However, Microsoft is starting to integrate tablets with XBox One. They already have Smartglass, which is nothing more than a retarded remote control and status viewer right now. But I saw that Dice has Tablet use in mind for the return of Commander play in Battlefield 4, if it's truly in real time, that will be amazing to behold.

Yeah, Steam and Origin piss me off to no end. XBox One's version of Live will likely piss me off to some degree, but not like Origin and Steam. Mainly Origin. But I only play games on my XBox, so I won't run into the DRM bullshit problems I have with Origin, and many other DRM ridden PC games, that wouldn't install because I had a CD Burning program or Daemon tools installed, bullshit like that. But yeah, Microsoft is getting big brother pushy again, because they've dominated the market. But I think they underestimate the numbers of casual gamers perfectly content with gaming on iPads and Android. Probably a big reason for the XBox One's $500 price tag. They're not going to lose piles of money on each console sold like they did in the past.
