  2. Bought some jowl bacon from University of Illinois meat science lab. In the oven on low heat for half an hour. The best bacon I've ever had by far. Of course, it's like 80% fat. Nearby HC'ers should definitely get some when it's on sale. Not my pic but looks just like it:
